Just put in a full load of jerky and cut the remaining brisket into thirds, so I should have about three more loads after this one. Prep time took about one hour. This includes after-prep clean up. I use salt, pepper, garlic and Onion flakes in that order. This time I decided to layer the trays of meat first and then season them one tray at a time. When deli slicing the meat I slice it about three times and then flip the meat over. It is a fair amount of physical work.
